 Ingredients

For the Cookie Cake: 

  • ·       10 tablespoons butter

  • ·       2/3 cups brown sugar

  • ·       1/3 cup white sugar

  • ·       1 egg + 1 egg yolk

  • ·       1 teaspoon vanilla

  • ·       1 2/3 cup all-purpose flour

  • ·       3/4 teaspoon baking soda

  • ·       3/4 teaspoon salt

  • ·       1 cup chocolate chips

For the Chocolate Buttercream Frosting: 

  • ·       4 tablespoons butter

  • ·       2 tablespoons cocoa powder

  • ·       1 1/4 cup powdered sugar

  • ·       1/2 teaspoon vanilla

  • ·       1-2 tablespoons milk

  • ·       Sprinkles

 Instructions

Step 1:

Preheat the oven up to 350 degrees F. take a 9-inch cake pan and grease it.

Step 2:

Cream the butter and sugar together for almost 2 minutes. Mix vanilla, egg and egg yolk in it.

Step 3:

Take all the dry ingredients in a separate bowl and mix them. Pour the creamy sugar and egg mixture in it slowly and mix them until combined. Use a wooden spoon for this purpose. Add two tablespoons of chocolate chips in it. Press the cookie cake dough in a cake pan or a pie plate. Sprinkle another 2 tablespoons of chocolate chips on the top of the mixture. Press them down slightly.

Step 4:

Put the pan in a pre-heat oven and bake for 22-25 minutes. Take it out from the oven as the cake gets prepared and let it cool completely. Insert a sharp knife at the edges to loosen. Use a large spatula to transfer it to the plate.

How to make Frosting? 

If you want to add a festive touch to your cookie cake, decorate it with whip cream or chocolate buttercream frosting. To make the frosting, put the put sugar and cocoa powder in a bowl. Stir them to blend. In another bowl, beat 4 tablespoons of butter with an electric beater until smooth. Keeping it on low speed, add the sugar mixture and a little milk in it. Continue to beat until the mixture gets smooth and creamy. Take a pastry bag and fit it with a decorative tip. Fill the frosting in it. Pipe the frosting around the corners of the cookie cake and add sprinkles. You may also prepare vanilla buttercream frosting in a similar way.
